Red Velvet Sanwich Cookie

Over the past few years I’ve become extremely familiar with the Red Velvet Cake. To think I’d never even heard of it before meeting my wife six or so years ago… Now it seems like you can get some variation of Red Velvet Cake almost everywhere, whether it be in shot form at Chilis, cupcakes from Claim Jumper and even a rather nice slice of cake from California Pizza Kitchen. Today the wife baked me Red Velvet Sandwich Cookies, recipe courtesy of Paula Dean and I must say they are fabulous.
